Roth Cheeses Make Summer Taste Better! #WelcomeSummer

*DISCLOSURE* Thank you to Roth Cheese for providing product samples in order to facilitate this post.  All thoughts are strictly my own.

Summertime means more daylight hours to spend playing outside and that means we are on the lookout for quick, simple meals that are also delicious.  Roth helped us elevate our easy breezy summer dinners with some of their best cheeses.

We were sent three different kinds of cheese from Roth: Grand Cru, Sliced Havarti and 3 Chile Gouda.  We had so much fun using these cheeses to create three quick,  delicious and satisfying meals perfect for those summer nights when you have better things to do than spend all your time in the kitchen.

First up, the Grand Cru Reserve:

Grand Cru® is Roth's signature alpine-style cheese. It’s made with the freshest milk in imported copper vats and aged 4+ months in their cellars. Robust and full-bodied, this cheese is perfect for a cheese tray or charcuterie board.

One of our favorite quick dinners is a hodge podge of salami/pepperoni, veggies, hummus, greek yogurt feta dip, olives and of course cheese.  Roth's Grand Cru was an awesome addition to our finger food dinner.

This meal is very kid-friendly and takes just minutes to throw together...great for busy summer nights!

Next up the Sliced Havarti:

Roth took the best Wisconsin has to offer and made it even creamier. Traditional cheesemaking methods, fresh milk from local family farms and premium ingredients make this extra-creamy Havarti so special.

Another summertime meal we have at least once a week is sandwiches.  Quite often, we use the panini press to make grilled cheese and we love experimenting with different ingredients.  This week we roasted portabella mushrooms and purple onions and layered them with sun-dried tomatoes, feta and Roth Sliced Havarti.  Put that between two slices of parmesan peppercorn bread and oh man...sandwich heaven!

Our final cheesy adventure was Chicken Mac N Cheese with Roth 3 Chile Pepper Gouda:

A colorful trio of chipotle, habanero and jalapeño peppers add a south-of-the-border twist to this award-winning cheese. Roth's 3 Chile Pepper Gouda boasts more smoke than spice, which is balanced by a soft, buttery texture for depth.

For this quick meal, I sprinkled olive oil and creole seasoning over a chicken breast and cooked it in the oven for 16 minutes.  While that was going, I made a pot of pasta and roux (butter, flour, milk) that we added the gouda to along with some salt, peeper and garlic powder.  We tossed the chopped chicken, the pasta and the cheese sauce and bam! (That's my inner Emeril:) Elevated mac n cheese in under 30 minutes!

Those of us who like it spicy sprinkled a little red pepper on top and it was creamy, cheesy and absolutely divine!

We really enjoyed using Roth cheeses to whip up these delicious, easy-peasy summertime meals!  Roth has so many more cheeses to choose from than just the three we tried, so make sure to look for them next time you're at the grocery store!
