Holiday POMojito Recipe (Non-Alcoholic)

For the Mint Syrup:
1 cups sugar
2 cup water
2 sprigs of mint

For the Mojito:
1/2 ounce mint simple syrup
2 lime wedges
10 fresh mint leaves (torn)
2 ounces POM Wonderful juice
2 ounces lemonade (fresh-squeezed)
2 ounces club soda (or light citrus soda)

For garnish:
POM Wonderful Arils
Sprig of mint

Make the Mint Simple Syrup:
Place the sugar and water in a small saucepan and bring to a gentle boil over medium-high heat while stirring constantly until all of the sugar is dissolved. Add the mint, reduce the heat, cover, and simmer for about 10 minutes.  Remove from heat and allow to cool, steeping for 2 to 3 hours to get a good flavor. Remove the mint, using a fine mesh strainer if needed.

Make the Mojito:
Muddle the mint syrup, lime, and mint leaves in a highball glass and fill with ice.  Add the pomegranate juice and lemonade, stir well and top with club soda.  Garnish with Pom Wonderful arils and fresh mint.

Pomegranate Lime Spritzer (Non-Alcoholic, 4 servings)
1/4 cup POM Wonderful juice
4 cups sparkling water
1 lime quartered

Add about 1 tablespoon pomegranate juice and 1 cup of sparkling water to each glass. Squeeze juice from 1/4 lime into each drink. Serve immediately.
